The base leans on tomato paste and soybean paste for body, with garlic, ginger and spring onion behind them; doubanjiang (fermented broad-bean and chilli paste) and a little red and black pepper sit further down the list than they do in the hotter grades, and sesame oil and sesame paste round it off.
